The air is crisp, the leaves are turning, and Fall is here!

There’s something magical about this season that makes it my favorite. The pace of life slows, offering a welcome calm, and the abundance of seasonal vegetables and spices transforms every meal into a celebration. Who can resist the comforting warmth of apple cinnamon cider, the velvety richness of butternut squash soups, apple pies or pumpkin lates? Fall invites me to embrace everything cozy, flavorful, and grounding.

There’s something deeply satisfying about embracing the natural rhythm of life, enjoying the heartiest, most nourishing foods exactly when they’re in season. It’s no coincidence—it’s the way we were meant to eat, aligned with God’s perfect design.

The Heart of Fall Harvest Foods — Hearty Fermented Vegetables

When I think of fall, my mind immediately goes to one of my absolute favorites: lacto-fermented beets, in their prime and bursting with the robust flavors of the season. 

Now, you might ask, “Why in the world would I make lacto-fermented beets?” The answer is simple: they are absolutely divine and full of natural probiotics. Their earthy sweetness takes on a complex, tangy flavorroasted fall harvest food and kale salad in bowl that pairs beautifully with nearly every fall dish, especially my signature roasted root vegetables and kale salad. And the best part? Fermented beets are incredibly easy to make. Not only are they one of the heaviest, most nutrient-dense vegetables around, but when fermented, they gain an extra kick of flavor and a probiotic boost that your gut will thank you for.

Another fall staple that I simply can’t live without is sauerkraut. There’s something so grounding about this humble dish, made from simple cabbage yet brimming with life after fermentation. It requires minimal effort—just a bit of patience—but the reward of opening a jar of your very own homemade kraut is nothing short of bliss. While we’re all familiar with the overwhelming benefits of fermented foods—gut health, immunity, and beyond—kraut holds a special place in my heart. Its rich fiber content, often lacking in modern diets, makes it an essential part of my fall meals, adding a layer of nourishment and satisfaction that’s hard to beat.

Warming Beverages: A Seasonal Embrace

With the cooler air, my love for “warming” beverages returns. Ginger is at the heart of my ritual, from morning ginger-lemon hot water to my evening Blueberry Ginger kombucha without ice. The rich, deep flavors match the rhythm of fall perfectly, bringing a sense of warmth and comfort.

When I have extra time, I treat myself to a healthy kombucha mocktail, adding a touch of spiciness or bitters for a special evening indulgence. And no fall day is complete without a morning cup of coffee, spiced with cinnamon and pumpkin spice, paired with a dash of real whole milk for creaminess—my homemade version is truly unbeatable.

For simpler comforts with the benefit of detoxificaton, I turn to dandelion tea for its grounding, earthy flavor or a cup of hot cocoa, dark and rich—perfect for those cozy fall evenings with just a tiny dash of brow sugar to balance the flavor..

Sweet Comfort

Though fermentation plays a key role in my kitchen, when it comes to fall desserts, I embrace baking. Growing up in Poland, pies weren’t part of our tradition. But after trying my first apple pie 23 years ago, I was hooked. Apple pie, made from scratch with real butter and rich brown sugar, is more than a dessert—it’s actually nourishing and deeply comforting. A hot cup of ginger green tea with a slice of apple pie, lightly dusted with real powdered sugar, is the epitome of fall coziness.

While pumpkin pie may reign supreme in American fall traditions, I’ve never quite warmed to it. Instead, I’ve created pumpkin and cream cheese bars, which are divine—capturing the essence of fall in a lighter, more delightful way. I’ll share the recipe in my next post.
