Peach Jasmine and the Art of Summer Tea

by Aneta

For long afternoons, open windows, and one more glass.

Some flavor pairings seem inevitable, even if no one can quite remember who first brought them together.

Peaches belong to summer. Tea belongs to long afternoons. Jasmine has been naturally perfuming tea leaves for centuries.

When I began working on Peach Jasmine Kombucha, I found myself wondering what would happen if those beautiful traditions met through fermentation.

Peach tea has long been part of the American summer. It is poured over ice, shared at backyard gatherings, packed for beach days, and served on porches where conversations seem to last a little longer. It is familiar in the best possible way, woven so naturally into the season that we rarely stop to think about it.

Jasmine tea tells a different story. For centuries, tea makers have carefully layered fresh jasmine blossoms among green tea leaves, allowing the leaves to absorb their fragrance over multiple evenings before the blossoms are replaced. It is a slow and deliberate craft, one that values patience over speed.

Fermentation became the bridge between those two traditions.

The bright sweetness of peach brings warmth and familiarity. Jasmine lends a delicate floral character that never overpowers the tea itself. Fermentation transforms them into something altogether different—crisp, lively, and unmistakably kombucha, while still honoring the ingredients that came before it. Best of all, it is natural and nourishing for the body.

Perhaps that is what I enjoy most about creating new flavors.

Not chasing novelty for its own sake, but discovering how old traditions can continue to evolve without losing their character.

I hope you’ll pour a glass over ice, find a quiet place outdoors, and enjoy one more taste of summer.
